  • 2 lb chicken pieces
  • 1 lb mushrooms, sliced
  • 3 tbsp olive oil
  • 1 medium onion, diced
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp butter
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • 1/2 cup white wine

Method
 

  1. Heat olive oil in a large skillet over medium-high heat until shimmering. Pat chicken pieces dry with paper towels, then season with salt and pepper before adding to the hot skillet.
  2. Cook chicken 8-10 minutes until golden brown on all sides, rotating halfway through cooking. Don't move pieces constantly; let them develop color undisturbed for better flavor development.
  3. Remove chicken to a clean plate, then add butter and diced onion to the skillet. Sauté 3-4 minutes until onions soften, stirring occasionally for even cooking.
  4. Stir in minced garlic and sliced mushrooms, cooking 4-5 minutes until mushrooms release their moisture. This family mushroom chicken step builds incredible depth through caramelization and browning.
  5. Pour white wine into the skillet and scrape up brown bits from the bottom using a wooden spoon. Let wine reduce for 2 minutes before adding chicken broth and herbs.
