Ingredients

  • 2 lbs salmon fillets
  • 4 tbsp butter
  • 1 large onion, diced
  • 3 celery stalks, diced
  • 4 medium potatoes, diced
  • 4 cups fish broth
  • 2 cups heavy cream
  • 1 cup corn
  • 2 bay leaves
  • 1 tsp thyme
  • Salt and pepper to taste
  • 2 tbsp fresh parsley
  • 1 tsp paprika

Method

  1. Melt butter in a large Dutch oven over medium heat, then add diced onion and celery. Sauté for 4-5 minutes until softened and fragrant, stirring occasionally to prevent browning.
  2. Add diced potatoes and fish broth, bringing the mixture to a gentle boil. Reduce heat and simmer for 8-10 minutes until potatoes are nearly tender but still hold their shape firmly.
  3. Cut salmon fillets into bite-sized chunks, removing any pin bones carefully with tweezers. Gently stir the salmon into your simmering fish chowder recipe along with corn, bay leaves, and thyme.
  4. Cook for exactly 4-5 minutes until salmon is opaque and flakes easily with a fork. The key is not overcooking—undercooked salmon finishes cooking when cream is added.
  5. Pour heavy cream slowly while stirring constantly to create a silky, luxurious base. Add paprika, salt, and pepper to taste, adjusting seasonings as needed for your family's preferences.
  6. Remove bay leaves and stir in fresh parsley just before serving for brightness. Simmer for 2-3 final minutes without boiling to meld all flavors together beautifully.
