  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1 celery stalk, diced
  • 3 cans white beans (15 oz each), drained and rinsed
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups fresh spinach
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • 1/2 tsp red pepper flakes
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery, stirring occasionally for 5 minutes until vegetables soften and become fragrant.
  2. Add minced garlic and cook for 1-2 minutes, stirring constantly to prevent burning while releasing aromatic oils. The mixture should smell incredible at this point.
  3. Pour in vegetable broth and add drained white beans, bay leaf, thyme, rosemary, and red pepper flakes. Bring to a boil, then reduce heat and simmer for 10 minutes to allow flavors to meld beautifully.
  4. Stir in heavy cream and fresh spinach, cooking 2-3 minutes more until spinach wilts completely into this comfort soup. Season with salt and black pepper to taste.
