  • 2 lbs fresh green beans trimmed
  • 1/2 cup dried cranberries
  • 1/4 cup butter
  • 1/2 cup sliced almonds
  • 3 cloves garlic minced
  • 1/4 cup orange juice
  • 2 tbsp maple syrup
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp ground ginger
  • 2 tbsp fresh thyme leaves
  • 1 tbsp balsamic vinegar
  • 1/4 cup vegetable broth

Method
 

  1. Toast the sliced almonds in a large skillet over medium heat for 3-4 minutes, stirring frequently until fragrant and lightly golden. Remove almonds to a small plate and set aside. This step prevents them from becoming soggy in the sauce later.
  2. In the same skillet, melt butter over medium heat and add minced garlic. Cook for 1-2 minutes until fragrant, being careful not to brown the garlic. Stir in the ground ginger and fresh thyme leaves.
  3. Add the trimmed green beans to the butter mixture and sauté for 5-6 minutes, stirring occasionally. The beans should begin to turn a brighter shade of green and become slightly tender.
  4. Whisk together the orange juice, maple syrup, Dijon mustard, balsamic vinegar, and vegetable broth in a small bowl. Pour this sauce into the skillet with the beans and stir well.
