  2. Pour sweetened condensed milk into a medium bowl, then add fresh lime juice slowly while stirring. The mixture will thicken slightly as the acid hits the milk, which is the exact moment you know the chemistry is working correctly.
  3. Stir in lime zest and salt, making sure the zest distributes throughout so flavor hits every section. I always use a microplane for zest because it releases the oils more effectively than a box grater does.
