  • 1 lb chicken breast, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (15 oz each) white beans, drained
  • 4 cups chicken broth
  • 1 can (4 oz) diced green chiles
  • 1 cup heavy cream
  • 1 tsp cumin
  • 1 tsp chili powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp oregano
  • 2 tbsp fresh cilantro, chopped
  • ½ cup corn
  • 1 lime, juiced

Method
 

  1. Heat olive oil in a large pot over medium-high heat. Add diced chicken breast and cook for 5-6 minutes, stirring occasionally, until the outside is no longer pink and chicken is nearly cooked through.
  2. Add diced onion to the pot and sauté for 2-3 minutes until it becomes fragrant and slightly translucent. Stir in minced garlic and cook for another 30 seconds until you can smell that delicious garlic aroma.
  3. Pour in chicken broth and add the drained white beans along with diced green chiles. Stir well to combine and bring the creamy hearty white bean chicken chili recipe to a gentle simmer, cooking for 8-10 minutes until flavors start blending together.
