Ingredients

  • 3 tbsp butter
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 2 lbs potatoes, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup heavy cream
  • 1/2 cup whole milk
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1 tsp salt
  • 1/4 cup cornstarch
  • 2 tbsp water
  • 1 cup corn kernels
  • 4 slices turkey strips, chopped
  • 1/4 cup fresh parsley

Method

  1. Melt butter in a large pot over medium heat, then add diced onion and cook until softened, about 3-4 minutes. Stir in minced garlic and cook another 30 seconds until fragrant before proceeding to the next step.
  2. Pour in chicken broth and add diced potatoes, carrots, and celery to the pot. Bring the mixture to a boil, then reduce heat and simmer for 12-15 minutes until potatoes are fork-tender but not falling apart completely.
  3. While vegetables cook, whisk cornstarch and water together in a small bowl to create a slurry. This creamy comforting potato chowder recipe uses this technique to achieve perfect thickness without flour.
  4. Stir in heavy cream, whole milk, dried thyme, salt, and black pepper into the simmering pot. Add the cornstarch slurry slowly while stirring constantly for 2-3 minutes until the soup thickens beautifully.
  5. Fold in corn kernels and chopped turkey strips, then simmer for 5 minutes to warm through completely. Taste and adjust seasonings as needed, adding extra salt or pepper to your preference.
  6. Ladle the creamy chowder into bowls and garnish generously with fresh parsley. Serve immediately while steaming hot for maximum comfort and satisfaction.
