  • 2 cans chickpeas, drained and rinsed
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 bay leaf
  • 2 cups fresh spinach
  • 1 tbsp lemon juice

Method
 

  1. Heat olive oil in a large pot over medium heat. Add diced onion, carrots, and celery, cooking for 5 minutes until vegetables begin softening and releasing their natural aromas.
  2. Stir in minced garlic and cook for exactly 1 minute until fragrant. Add cumin, paprika, salt, pepper, and bay leaf, mixing constantly so the spices toast slightly and activate their flavors.
  3. Pour in the vegetable broth and canned diced tomatoes with their juices. Bring the mixture to a gentle boil, then reduce heat to medium-low and simmer for 8 minutes to develop the base flavors.
  4. Add the drained chickpeas to the pot and stir well to distribute evenly throughout the broth. This chickpea soup will become creamier as the legumes break down slightly during cooking, creating natural body without heavy cream.
