  • 1 lb ground beef
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 2 cups diced potatoes
  • 1 cup diced bell peppers
  • 1 cup diced zucchini
  • 1 can diced tomatoes 14.5 oz
  • 1 cup beef broth
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley chopped

Method
 

  1. Heat olive oil in a large skillet over medium-high heat for 1 minute. Add ground beef and cook for 4-5 minutes, breaking it into small pieces with a wooden spoon until browned throughout and no pink remains.
  2. Stir in diced onion and minced garlic, cooking for 2 minutes until softened and fragrant. The aromatics will fill your kitchen with an amazing smell that signals dinner is coming soon.
