  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh parsley

Method
 

  1. Combine Greek yogurt, olive oil, lemon juice, and honey in a large bowl, whisking until the honey dissolves completely. I confess I used to skip the whisking and just dump everything together—the separated honey clumps refuse to coat evenly. Mix for exactly one minute.
  2. Add smoked paprika, garlic powder, onion powder, ground cumin, cayenne pepper, salt, and black pepper to the yogurt mixture. Stir until no spice streaks remain visible in the marinade. This distributes the seasonings evenly so each drumstick gets the same flavor profile instead of some being bland and others overpowering.
  3. Pat the drumsticks dry with paper towels before adding them to the bowl. Dry skin allows the marinade to cling instead of sliding off. Coat every piece thoroughly in the yogurt mixture, then refrigerate for at least 15 minutes, up to 2 hours—longer marinating means more tender meat.
  4. Preheat your grill to medium-high heat (around 400°F if using a thermometer). Oil the grates with a paper towel and tongs so the drumsticks won't stick. Tom learned this the hard way after losing half a batch to the grates last summer.
  5. Place drumsticks on the grill with space between each one—crowding the grate drops the temperature and creates steam instead of char. Grill for 18–20 minutes on the first side without moving them. Resist the urge to flip early because the marinade needs time to caramelize into that glaze.
  6. Flip the drumsticks and grill the other side for 15–17 minutes until the internal temperature reaches 165°F at the thickest part of the thigh. Use an instant-read thermometer inserted without touching bone. The skin should look dark and almost charred in spots—that's where the honey concentrated and cooked down.
  7. Transfer the drumsticks to a serving platter and sprinkle fresh parsley over top while they're still hot. The residual heat releases the parsley's fragrance and makes the presentation actually feel intentional instead of an afterthought.
