  1. Pour 1 cup water into a small saucepan and bring it to a boil over medium-high heat. Stir in 1/2 cup granulated sugar and 1 oz gelatin powder, mixing constantly until completely dissolved. This takes about 2-3 minutes, and you'll know it's ready when there are no visible gelatin granules.
  2. Remove the pan from heat and let it cool for 5 minutes. Stir in 1/2 cup strawberry juice and 1/4 cup lemon juice together. Divide this red mixture evenly among 6 clear cups, filling each about 1/3 of the way up.
  3. Refrigerate the cups for at least 30 minutes until the red layer sets completely. I learned this the hard way—if you don't wait long enough, the layers mix together and you lose those gorgeous stripes. Don't panic if it looks watery at first; it thickens up fast once it's chilled.
  4. Make the blue layer by mixing 1/2 cup blueberry juice into 1/4 cup cooled water. Pour this carefully over the set red layer, dividing among all 6 cups. Chill again for 30 minutes until this layer firms up completely.
  5. Divide 1 cup whipped topping evenly across the tops of all 6 cups to create that creamy white layer. Sprinkle 1/4 cup mini marshmallows and edible gold sprinkles across each cup for festive flair.
  6. Top with 1/2 cup diced strawberries and 1/2 cup diced blueberries distributed among the cups. Drizzle 2 tbsp honey over everything as a sweet finishing touch. Refrigerate until you're ready to serve—they'll keep for up to 2 days this way.
